The flies take up to a week to mature and wont lay eggs until they are. When i have started a new batch of flies there is no need to put a medium in until you see the males mating and the swollen white bellies of the females when they are hanging on the fly wire.

This is why your medium is going mouldy, your being too anxious imo. Craig
