With Guinea grass just let it grow here. And when it has spread like a weed, cut off about 30cm above ground leval and remove the rattiest looking plants until you have it culled back to how many you want to keep and put the ones you culled in the avairy for the birds to peck through before binning.

Don't know about the first one - look like one of the Poa species - I'd need to see a spiklet close up to have a better go at it. Poaspecies include winter-grass and November (swamp) grass. The second grass is Bromus catharticus.
