Hi there, I'm new to finches, have had canaries for a while and was wondering whether the bottle drinkers used for canaries would be suitable for gouldians?

They would be able to use them, whether they have used them will be the main thing. If it was me I would be putting a highly visible water source similar to the ones you see them using from wherever you buy them, in the cage/aviary near to the waterers you want them to use,
Once you are ABSOLUTELY sure all of them have been drinking from the bottles then gradually remove the open waterers. Putting a bird that is used to using the bottles in the cage with them, after quarantine will help them get used to them also.
