Something I did do back home for my birds, was to boil chicken breast, run through the food processor, add to egg food. Is this a bad thing? The birds appeared to have enjoyed it!

Recipe for disaster! When feeding soft food unless it's in open well ventilated place it spoils quickly, and chicken is well known for salmonella. Why not go for something fresh like green seeds etc, their digestive system is more designed for greed seeds then meat. Home made egg and biscuit is much safer supplement option. (Assuming you are talking about finches.)

Any soft food ( moist )should be taken away in a short period of time else it will spoil especially in Summer .
The extra protein from the chicken wouldnt hurt , its reccommended for some parrots , Kaks for one HOWEVER yeah if left too long bad news but no different to boiled eggs me thinks .
Accept that some days you are the pigeon, and some days you are the statue.
