Just figuring out which finches to get, i know i have to have an even number but do they have to be the same variety? Will 2 different varieties breed?

Yes certain breeds will hybridize which is the last thing you or anyone wants!!!!!!!!!!!!!

If you mean having a male of one type of finch and a hen of another,well yes some will breed interspecies and the result will be a hybrid, with these many people don't condone that practice of breeding. There are some speices that will not breed together at all.
If your referring to having two pairs of birds and both pair being of different type of finch, well yes this will work but try to get finches with the same temperament eg/stars and painteds (Emblemas) this will ensure that the birds get along better. Now if you decide that you want to have a few different types of finches do some research or ask question before looking at purchasing to make sure that you can that those types of finches together and can live harmoniously together.
