I have kept Parsons and Cubans and Cordons and Blue and Red Faced Parrotfinches with Cutthroats not all in the same aviary at same time with each other but all those have been with Cutthroats at some stage breeding.

Which species got along the most with the cutthroats?

The species that got a little dominated by Cutthroats was Cordons and Red Faced Parrot Finch.

The species I have had run best with Cutthroats are Cubans,Blue Faced Parrot Finch and Parsons.

Will ruddies be alright with the cutties by any chance?

I'd strongly recommend against any smaller placid species such as Ruddies. Ideally just Cutties but if you must add others I'd only put in others at least as large as the Cutthroat.

What can I keep with ruddies? (sorry for jumping from specie to specie)

Meaning species with same temperment and size of Cutthroats and Parsons and Blue Faced Parrot Finches are the same size and temperment.Ruddies are to fragile to keep with Cutthroats.

If you want keep smaller species together you could keep species like all these together in a mixed flight Cordons,Fires and Orange Breasts or Plumheads.These would be Ideal

I think Cubans have softened a lot over the years - I currently run three pair together with zero hassles. I have known of colonies of 10 pair plus. Its a bit like crimsons - the old killer instinct seems to have dulled down.
