Top one may be giant Parramatta Grass. Is it tough as old boots?

Spot on, even cattle will only eat newly emerging leaves, after that nothing will touch it, it's also a dcalred weed in most parts of the country.

Yep, looks like Parramatta grass to me.

Birds will eat them all but probably get most green seed out of johnson grass & setaria.

Parramatta grass is so tough it wears down cattle teeth if they have nothing else to eat. I grew up next to a paddock full of it & the squeaking sound of the cattle teeth trying to break the parramatta grass kept me awake many a night.
