Nice birds but am curious as to why they hold their beaks open in almost all shots.?

You certainly have a few finches there. And some interesting ones at that.

I was wondering that as well. air sack? or maybe it's just hot under the lights.

I don't think they like the cage the photos are taken in , too much white disorients them and yes the heat from the very bright light would make them hold the beak open too.
They don't look comfortable sorry.

Some of my gouldians hold their mouths open like that if they feel threatened by another bird.

Probably a bit on the upset side at being put in the "viewing/photography" cage and having a camera poked at them.
