Before moving to the Philippines I didn't really appreciate the humble sausage. Here like most things that look familiar they aren't. Sausages are a confectionary item literally stuffed with sugar! I can't stomach them and so I decied to try my hand at making them. Technically I've got it right but I haven't cracked the recipe yet. All meat and they are like dry saw-dust when cooked and tend to explode, so I added fat and water the texture improved but they are subject to too much shrinkage. I've read that I can add bread-crumbs to stop this. Rather than keep wasting meat do we have a butcher amounsgs us that can give me an recipe?

When I was a kid in Tamworth, as Buzzard may remember, there was a butcher at Kay's Wholesale Butchery named Les Wennen that kept lots of finches and small parrots. What a resource that guy would be - he showed me my first and probably last look at Aberdeens in his back yard. Kays and Les have no doubt passed on but Aussie snags remain No1 - if only I could get hold of them. Can any one help with a receipe?

Kays is still there, probably run by new people.I personally have made thousands are you using cereal?

G'day Buzzard I just use pork butt & fat, water, salt, sage, paprika, nut-meg, and some minor spices. What's your recipe?

So Kays is still there. You aren't Les I suppose? I looked in the white pages and I think Les might still be around but it's been so long I can't quite remember where he was but it's in the general area I remember his place. Glen Bowden is still around so I guess I shouldn't "retire" people before thier time. Do you remember Bowden's Bird World in the old Family hotel in West Tamworth?

If your doing your own spice mix defiantly add bread crumbs and really cold water to the point of where you can hardly hold your hand in the mix.Hang for at least 24hrs the longer the better.Glen is still around works shift work so has plenty of time for birds he's built a new house out of town great aviary set up.
