how do i know if seeds are ripe or not?

Cut open a few of the seed. An unripe seed is usually soft, milky or glassy inside. Once the embryo's form then they become more of a solid white and harden. If you take the seed cover off and the filling is more like a chunky paste or two halves (like in beans) its ripe generally speaking.
